Vacanza Pizzeria Bronte opened its doors in 2010 and two years later, Vacanza Pizzeria Surry Hills followed.
Both restaurants have attracted rave reviews from locals and critics for their authentic southern Italian-style pizza, being voted in the top ten pizzerias in the SMH Good Food Guide. Vacanza has also featured in The Gourmet Traveller Restaurant Guide and is regularly named by TimeOut as one of Sydney’s best pizza restaurants.
Vacanza, meaning ‘holiday’ in Italian, is the brainchild of pizza-obsessed owner Nick Gilbert, whose love of Italian food culture, and specifically pizza, took him on a journey to southern Italy. Here he spent time learning the traditional art of pizza-making, before ultimately turning his passion into Vacanza Pizzeria.
Using ingredients sourced from Australia and Italy’s finest producers and suppliers, Vacanza not only boasts some of Sydney’s best pizza, but also a selection of antipasti, pasta and other authentic stone-baked Italian dishes. These are accompanied by a well-selected list of affordable Australian and Italian wine and of course, imported Italian beers.
Vacanza’s to-die-for handmade pizzas are of course the restaurant’s crowning glory, including cult favourite ‘Il Pizzaiolo del Presidente Diavola’, a mouth-watering combination of tomato, fior di latte, hot Calabrese salami, fresh chilli and olives. The traditional ‘Brandi Bufalina Margherita’ is Nick’s homage to his time spent in southern Italy, while the popular Il Capitano features a delicious mix of Swiss mushrooms, goats cheese, Italian sausage and truffle oil.
